Kathirikai noi pongal (Broken rice with baby brinjals)

After long time I am reentering the blogging world with a fresh set of recipes. Its almost one and half years since we moved to the village in the foothills of Sadhuragiri. These past days have made great changes to my cooking style. Now I have learned to maintain a resoruceful kitchen. I learnt to make tasty and simple dishes with less number of ingredients.

Now my kitchen contains fresh vegetables, fruits mostly lcoally
grown. I don’t have any fancy veggies or rare ingredients. But I am now able to make quick, flavorful, healthy and simple dishes. One among is this brinjal pongal.

One of our friends brings freshly picked baby brinjals from her fields. The “rice noi” which is a by product when paddy is ground in the mill to make rice. If you do not have this at home you can substitute with broken raw rice. This dish is a one pot dish and gets cooked in 20 minutes. Now jumping into the recipe…

Kathirikai Noi Pongal

Ingredients :
Broken rice – 1 Cup
Baby brinjals – 6
Onion (thinly sliced) – 1/2 Cup
Ginger garlic paste – 1 tea spoon
Sambar powder – 1 teaspoon
Turmeric powder – 1 pinch

Tamarind – 1 small lemon sized

Salt – 1 teaspoon (adjust as per taste )

To season :
Bay leaf – 2
Cinnamon – 1 inch stick
Curry leaves – 1 sprig

Peanut oit – 2 Table spoon

How to make ?

Wash the rice noi and drain the water and keep it aside. Soak the tamarind in 1/2 Cup of water for 10 minutes and extract the pulp. Else you dissolve 1 teaspoon of  tamarind pulp in 1/2 Cup of water too. Slice the brinjals into thin strips and put it in water. In a pressure cooker pan heat the oil and add the items under “To season”. Once the spices starts to turn golden brown add the ginger garlic paste and saute. Once the paste turns golden add the onions. Saute till the onions are soft. Add the brinjals and simmer and saute once in a while till the brinjals wilt.
Now add the sambar powder and turmeric powder and mix well. Add the tamarind extract and let it come to a boil. Add the rice and saute for a minute. Now add 2  Cups of water and salt.  Mix well and taste and adjust salt in needed. Now raise the flame and let the mix come to a boil. Now close the lid of the cooker and cook for 2 whistles. Open the cooker once the pressure comes down. Serve this flavorful simple dish with a pappad and some curds.
